260|365. perfect bread..

2 cups of whole wheat bread flour
1 cup of spelt flour
3 cups of white bread flour
1 1/2 tsp of rapid rising yeast ( maybe non rapid rising yeast would work as well, but that is what I have in the house right now)
2 1/2 tsp of salt
3 cups of luke-warm water
mix all together, stir with a spoon, cover and allow to rise for 8-12 hours (overnight)
take out of bowl, turn it over, shape on a oiled surface, put back in the bowl, let rise another 1-2 hours
preheat oven at 450F (230C) and "dutch oven" or cast iron pan (Le Creuset type pan) in oven. Take hot pan out, put your dough in it, "cut" & sprinkle flour on it to make it look pretty.
Let it cook for 30 mn with lid, and then 30 mn without lid.
allow to cool a bit before cutting. Hide from your husband and kids and eat the whole loaf :-)
