Years ago, my neighbor in La Ponchardière gave me the secret to delicious and tasty pumpkin soup.
Make sure your roast the pumpkin in the pan with the onions before adding water and boiling the pieces of pumpkin. It makes a HUGE difference. And the last couple of years I have added coconut to it (shredded or cream, whichever form you prefer). The taste of coconut in pumpkin soup is perfect.
and you also need a piece or hearty grain bread.
