Elderberry flower syrup recipe
by Léa
I love elderberry flower syrup in the summer. Very refreshing.
My polish friend, Kasha, gave me a recipe and it came out really nice.
40 flower clusters
4 lemons
1 liter of boiling water (4.2 cups)
2 kg of sugar (4.4 lbs)
Kasha recommended not washing the flowers so that you can keep all the goodness of the pollen in your syrup.
Put all the flowers in a pan, take all the green stems off, just the little flowers....the not fun part!
put the juice of the 4 lemons on the flowers and the yellow peel of lemons. Pour 1 liter of boiling water over it, and let it sit for 2 days. ( I covered it because of flies)
After two days, put the sugar init and bring it to boil, only allow it to boil for 3mn ( or you'll loose all the vitamins).
Put it in your sterilized bottles ( it still need to find a good way on how to sterilize bottles). ( I had 2 bottles of one liter each)
It it pretty sweet to I put a little bit of syrup (maybe 1/4 of an inch for a big glass of water), serve Very cold with lemon or lime.
I used brown sugar cane so the syrup looks dark brown.
